It's not exactly what you are looking at, but it might be relevant anyway...

There's an Italian company, Cyberfunk, that has carried (sp?) on a
medical project with an hospital here in Milan (originally developed
for cognitive rehab). In this application, called ARCANA, the virtual
environment in which the patient will be immersed is not a 3D model,
but it's parametrically defined (as a series of connected odd-shaped
rooms, with doors & corridors), so the doctor can "build" it on the
fly, just before having the patient get into it. This allows the
doctor to build the environment as complex or as simple as he needs
for his diagnosis and rehab purposes...

This is the closest thing I am aware of.
